Ingredients

Potatoes - (the amount of Potatoes & Swede you will need will depend on the size of your dish/tray)
Swede
Cream
Garlic
Thyme
Salt and pepper
Bread Crumbs
Parmesan Cheese

Method

Begin by adding the cream to the pot. (use milk if you want to)
Add in the chopped garlic and fresh thyme leaves and season with salt & pepper.
Simmer and bring all these ingredients up to the boil. After 2-3 minutes turn the pot off. (Don't let it boil over - Stay with it & don't walk away)
This will help all the ingredients infuse together.

Layer the Tray
Start by layering your sliced potato and swede into the tray.
Season each layer with salt & pepper.
Add the creamy warm mixture from the pot on each layer.
When you reach the top of the tray, pour the remaining creamy mixture over the top and sprinkle bread crumbs over the top and add a generous amount of fresh grated parmesan. This will give this dish a beautiful crunchy topping.
Finally put your tray into a preheated oven for 40 minutes at 180oC or
350F
