The deep sour broth from the tamarind plus the savory flavor of pork ribs and the contrasting textures of soft taro and crunchy greens—it is the ultimate comfort food!

Ingredients:
2 lbs pork ribs
½ cup tamarind paste (usually available at any Asian Stores especially Thai’s)
1 tbs salt
2 tbs fish sauce
1 tbs ground pepper
1 medium onion, sliced
2 medium tomatoes, sliced
6 cups of water
2 pcs taro, sliced
2 pcs green peppers
A bunch of string beans (#sitaw)) cut in inch size
A bunch of bokchoi or pechay
2 tbs cooking oil

Process:
1. To start, soak the tamarind paste into a cup of hot water and set aside at least for 15 minutes.
2. Salt the pork ribs. In a wide skillet, heat the oil and fry the meat quickly for two minutes on each side.

Quick note, this browning process is called the Maillard reaction. The chemical reaction between amino acids & reducing sugars that gives browned food its distinctive flavor.

3. Add 6 cups of water and bring to a boil for 10 minutes in medium heat.
4. Skim off the scum and fat that accumulates on the surface of the stock. This is very important to create a nice and clean soup.
5. Add ground pepper, onions and tomatoes. Stir gently and simmer for about 20 to 30 minutes or until the meat is tender.
6. Now let’s revisit our soaked tamarind paste. Use a spoon to stir a little bit and release more of the tamarind flavor then sift it to remove lumps and large particles of the dried fruit. Once ready, pour it into the pot. (add more or less based on the degree of sourness you like).
7. Then add the taro and cook for another 8 to 10 minutes until it’s soft—almost melted—this will give a little thickness in our soup base.
8. When everything is ready, add the peppers, string beans and bok choi on top—don’t mix them in. Cover and continue to simmer for the last 2 minutes this is just enough to blanch the greens. If you like it more wilted, add a few minutes to simmer.
9. Turn off the heat and serve generously.
10. Best to pair this with steamed rice. Enjoy!
