Kasutori shochu is one of the tastiest and most fascinating shochus, made from the left over rice lees after sake brewing - and we tasted a fantastic example, the Hanamikura Daiginjo!

Distillery: Hakusen
Place: Gifu prefecture, central Honshu
Koji: yellow koji
Distillation type: Atmospheric

Made from the left over rice from sake, high polish down to 35% of the grain remaining Daiginjo sake (more delicate) that is re fermented and distilled to create Kasutori shochu
