करंजी सारण / बाकर
• किसलेले सुके खोबरे दीड कप
• पीठ साखर अडीच कप
• खसखस 2 tbsp
• वेलची पावडर ½ tsp
करंजी आवरण / करंजी cover
• बारीक रवा 3 कप
• तांदळाचे पीठ 2 tbsp
• साजूक तूप ½ कप
• मीठ चवीनुसार

Ravyachi karanji recipe is an authentic Maharashtrian sweet recipe. It can be prepared using semolina, maida, whole wheat flour. Most of us use maida to make karanji. But today we are preparing healthier and authentic recipe of karanji. We are making this karanji recipe without maida but still karanji will become flaky, and perfect. Here I have shared very important tips to make this Diwali Faral recipe pudachi karanji, ghadichi karanji, satyachi karanji, karanji, in hindi we call it as gujiya. Earlier we have made gulachi karanji, til gulachi karanji and maida karanji, satyachi karanji, Today we are making khuskhushit perfect flaky rava karanji recipe. We made many Diwali faral sweets like god shankarpali, besan ladu, pakatale rava ladu, binapakache rava ladu, rava besan ladu, some dowali tea time snakcs like chakali, shev, chivda but the most authentic recipes is karanji.

Ingredients needed to make Ravyachi Khuskhushit karanji –
For Stuffing-
• Grated Dry Coconut 1.5 Cups /
• Poppy Seeds 2 tbsp / 2 tbsp
• Powdered Sugar 2.5 Cups /
• Green Cardamom Powder 1 tsp
For Karanji Cover –
• Fine Samolina / Fine suji / Barik Rava – 3 Cups / ½ kilo
• Rice Flour 2 tbsp /
• Ghee ½ cups
• Salt to taste
Oil for frying

Method –
Stuffing –
• Dry roast poppy seeds and grated coconut separately and cool down completely.
• Grind roasted poppy seeds and coconut to coarse powder
• Take the mixture in a mixing bowl and add powder sugar and cardamom powder and mix well.
• Karanji stuffing is ready.
Karanji Cover-
• In a mixing bowl add semolina / suji, Rice flour and salt and mix
• In a pan heat ghee and add hot ghee onto rava and mix well
• Using water knead tight dough and cover it for an hour
• After an hour knead the soaked rava using food processor or mixer grinder.
• You will get soft dough which is ready to make karanji.

Karanji-
• Take some dough and roll, cut small pieces.
• Take one piece and roll to oval shape.
• Fill the stuffing (1-2 tsp stuffing) and close the edges and cut using karanji cutter
• Make all the karanjis and fry on low heat to light golder color.
