Hello friends! Welcome to my kitchen, Kathiyawadi Swad. Today I, Bhavanaben Rathod will prepare flavourful Kantola (Spiny Gourd) vegetable dish. This traditional recipe is sure to delight everyone in your family, from the youngest to the oldest! Let's dive into this delicious and healthy dish🌶️

🕒 *Cook + Prep Time*:
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Total Time: 20 minutes

🛒 *Ingredients*:

*For the Masala*:
Garlic (6-7 cloves)
Ginger (1 inch piece)
White sesame seeds (1 spoon)
Neem leaves (Sweet Neem or Curry Leaves)
Saunf (Fennel Seeds/Variyari) (1 spoon)
Roasted-Chana Dhal/Groundnuts
Red chili powder (2 spoons, adjust to taste)
Turmeric powder (1 spoon)
Coriander powder (1.5 teaspoons)
Salt (to taste

*For the Vegetable*:
Kantola (Spiny Gourd) – available fresh during monsoon
Oil (for frying)
Rai (Mustard Seeds) (½ spoon)
Cumin seeds (½ spoon)
Fenugreek seeds
Asafoetida (for enhancing digestion)
Water (as needed)
Ghee (2 spoons)
Cashew nuts (roasted)
Jaggery (1 spoon, optional)
Garam masala (to taste)
Fresh coriander leaves (chopped, for garnish)

👩‍🍳 *Method*:
1. *Prepare the Masala*:
In a mixer jar, grind garlic, white sesame seeds, and neem leaves and Roasted-Chana Dhal/Groundnuts.
Add red chili powder, turmeric powder, coriander powder, and salt. Mix well.

2. *Cook the Vegetable*:
Heat oil in a pan and add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.
Add the prepared masala to the oil and fry until aromatic.
Add chopped Kantola to the pan and mix well.
Add a small amount of water (about half a small bowl) and cook until the Kantola is tender.
Separately, roast cashew nuts in ghee and add them to the vegetable.
Add jaggery to balance the flavors and finish with garam masala and fresh coriander leaves.

3. *Serve*:
Serve the Kantola vegetable hot with phulka roti for a complete meal.
