INGREDIENTS FOR PASTA:
4 ounces of flour (keep extra on side to add while rolling dough)
2 eggs
drizzle olive oil
salt to pinch
** for green color add 2 ounces of boiled spinach and for red color add boiled beets

INGREDIENTS FOR TORTELLONI FILLING:
12 ounces of ricotta cheese
1 ounce of asiago cheese
parsley
1 egg
pinch of salt
pinch of pepper

INGREDIENTS FOR SPECK AND ROSEMARY SAUCE:
1 shallot
parsley
rosemary
speck italiano
pinch of pepper
pinch of salt
drizzle olive oil
can of diced tomatoes
