In today's video I'm showing you how I did my daughter's 1st birthday. Her them was 1st rodeo. I'm so happy I decided to stick with this theme because it was so much fun to see everyone participate with their hats and boots.

I found tons of inspiration and ideas from Pinterest and google, so if you are planning a kids party soon, you have a theme but don't know where to start.. take a look at Pinterest. Oh and Esty was my best friend when it came to personalizing things for the party.

Cookie Recipe
1 cup - unsalted butter
1 cup - brown sugar
1/3 cup granulated sugar
2 lg eggs
1 3/4 cup - all purpose flour
1tbsp corn starch
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tbsp vanilla extract
200 gr semisweet and or milk chocolate chips

Instructions
1. 1. In a small saucepan, melt your butter and keep whisking until it turns brown - keep an eye on it to get it unburnt and let it chill before mixing with other ingredients,
2. In a large bowl, mix your eggs first then add brown and granulated sugar and mix together,
3. Add your brown butter into your sugar and eggs mix,
4. In a seperate large bowl or with an help of a sifter, sift all of your dry ingredients and add into the butter, mix it all together until all well corporated,
5. Add chocolate chips and chunks and let it cool in the fridge for 30 mins,6. Roll the dough into balls and place them on a baking sheet. Leave distance between the balls as you don’t want them to stick each other,
7. Bake at 170C for around 10-12 mins - if your oven cooks fast then take them out once the outers look slightly crispy and very smooth inside- they look smooth once you take them out but don’t worry they will get into cookie form once they are fully cooled.

Notes

* - you will get definitely a lot better form and taste of cookies if you chill the dough in the fridge, leave them at least for 20-30 minutes. - 4 hours is perfect too!
* - definitely keep an eye on your oven, every oven cooks differently. I recommend checking them after 7-8 minutes, once the outers are crispy and inside is still smooth take them out. Do not touch them first 5-10 minutes to get in form.
