Holiday Pot Roast

Nothing can replace a good roasted turkey for a proper holiday dinner...other than a tender pot roast cooked from the heart. Toss in some soul warming root veg, roasted mushrooms, and tender collards for something really special. This will make any holiday gathering worthy of really sinking into and remembering. Ingredients:
2-3lb chuck roast
2 Fennel bulbs
1 large package of Cremini Mushrooms
2 whole yellow onions
2 bunches collard greens
3-4 carrots
3 garlic cloves
1 bunch of fresh thyme
4 tbsp butter
3-4 cups water
3tbs all purpose flour
salt and black pepper to taste
