This healthy chicken dinner recipe has been my family’s favorite meal lately—and for good reason! It’s simple, healthy, and perfect when you need an easy dinner idea to feed a crowd. I’ve made it on repeat this summer for visitors, and it’s always a hit. Even my super picky husband loved it!
🍗 The chicken – juicy chicken tenders seasoned with salt, pepper, and garlic powder, sautéed in my favorite Palmetto Olive Oil, then finished with Bachan’s BBQ sauce (linked in my Amazon storefront). This BBQ chicken recipe is quick, gluten-free, and absolutely delicious.

🥗 The salad – a fresh summer salad made with mixed greens and/or romaine, organic black beans (strained & rinsed), fresh organic corn cut from the cob, tomatoes, green onions, and the only ranch dressing I’ll ever use (linked in my storefront). This combination makes the perfect BBQ chicken salad that’s both satisfying and nutrient-packed.
