Bread Poha is another version of poha but instead of flattened rice we use bread slices. It’s a quick and easy recipe with mouthwatering taste. This dish is best for breakfast and as a light snack. Its soft, slightly tangy and peanuts add such a nice crunch to it. You can try it with green chutney or sauce and it also goes well with a cup of chai. Ingredients:

4 White Bread Slices
2 medium Tomatoes (finely chopped)
1 medium Onion (chopped)
2 tbsp Cooking Oil
1 big Potatoes (boiled and cubed)
¼ cup Coriander Leaves
1 tbsp Green Chillies (finely chopped)
¼ cup Peanuts
7-8 Curry Leaves (aka Kadi Patta)
1 tsp Mustard Seeds (aka Sarso)
½ tsp Red Chilli Powder (aka Paprika)
½ tsp Turmeric Powder
1 tbsp Lemon Juice
Salt (according to taste)


Instructions:

1. First take 4 bread slices, I am using white bread as they taste better but you can also use breads of your choice like brown bread. Now cut bread into small square pieces like this. Make sure not to cut them too big or too small, we want pieces of size as shown in video. Similarly, cut all bread slices.

2. Now lets start cooking, for this first take a pan on medium high heat then add 2 tbsp cooking oil. When oil is little hot add peanuts and sauté them on low-medium heat for 3-4 mins till they turn light brown and become crispy. Once peanuts are cooked strain all oil and take them out in a bowl, we will use them later in the recipe.

3. Now put heat to medium and add 1 tsp mustard seeds, when they start crackling add curry leaves and stir them a little. Curry leaves give nice aroma and taste to bread poha. Now add ½ cup chopped onion and 1 tbsp green chillies, mix it and cook on medium heat till onions are cooked and turn pink. Just make sure not to overcook them, as we don’t want onions to become brown.

4. Once onions are cooked add 1 cup chopped tomatoes, ½ tsp turmeric powder, ½ tsp Red Chilli powder and salt according to taste. Mix them well so that all spices mix well with tomatoes and onions. Now cover the pan and let it cook on medium heat for 4-5 mins till they become soft.

5. Once tomatoes mixture has cooked and become soft mash them a little with ladle so that they become more like a paste. Now put the heat to low and add 1 cup boiled and cubed potatoes, fried peanuts, 1 tbsp Lemon Juice and mix it well with tomato masala.

6. Now add bread pieces and mix them well with tomato masala with gentel hands, otherwise bread will become mushy. At last add some fresh green coriander for nice taste and mix it well with bread poha.

7. Now our super yummy bread poha is ready, so take it out in a bowl and enjoy.


Tips n Tricks:

1. Add lemon according to the tanginess you want in bread poha. You can also add lemon after transferring it to serving plate to enhance the taste.
2. To make it even more healthy you can use brown bread.
3. If you don’t like white bread you can use any kind of bread.
4. If you dont have curry leaves, you can skip adding them.
