Looking for weekday lunchbox ideas that are quick, comforting, and full of flavor?
In Episode 6 of The Office Meal Box, I’m sharing two tried & tested tiffin recipes – Lauki Dal and Soya Chunks Fry.
Both pair beautifully with rice, roti, or just as-is for a wholesome lunch!

✨✨ Recipe 1: Lauki Dal ✨✨

Ingredients –
 1.⁠ ⁠Chana dal – ½ cup
 2.⁠ ⁠Lauki/Bottle Gourd – 1 medium
 3.⁠ ⁠Salt – to taste
 4.⁠ ⁠Water – 250 ml
 5.⁠ ⁠Red Chilli Powder – ½ tsp
 6.⁠ ⁠Turmeric Powder – 1 tsp
 7.⁠ ⁠Coriander Powder – 1 tbsp
 8.⁠ ⁠Garam Masala – 1 tsp
 9.⁠ ⁠Heeng – a pinch
10.⁠ ⁠Ginger – 1–2 inch piece
11.⁠ ⁠Green Chillies – 2
12.⁠ ⁠Cumin Seeds – 1 tsp
13.⁠ ⁠Tomato purée – from 2 small tomatoes
14.⁠ ⁠Desi Ghee – 3 tbsp
15.⁠ ⁠Fresh Coriander – for garnish

Method-
 1.⁠ ⁠Start by soaking chana dal in water for 30 mins and chop a medium size Lauki or bottle gourd into cubes.
 2.⁠ ⁠⁠Once the dal is well soaked in a pressure cooked add a tbsp of desi ghee followed bu chopped Lauki, soaked dal and salt to taste.
 3.⁠ ⁠⁠Mix and sauté on medium flame for 2-3 mins.
 4.⁠ ⁠⁠Then add the water to this mix. It should be enough to cover the vegetables in the pressure cooker. Mix again and then close the lid.
 5.⁠ ⁠⁠Pressure cook for 4-5 whistles.
 6.⁠ ⁠⁠In the meanwhile prepare the tadka for the dal. For which heat 2 tbsp of desi ghee in a Kadhai and then add heeng, cumin seeds, finely chopped ginger and green chillis.
 7.⁠ ⁠⁠Sauté on low medium flame for 1-2 mins until ginger is fragrant.
 8.⁠ ⁠⁠Once done add the tomato purée followed by all the dry spices and salt.
 9.⁠ ⁠⁠Mix well and cook on medium flame for 4-5 mins until the oil release from the corners.
10.⁠ ⁠⁠Also once the pressure is released from the cooker check if the dal is well cooked. If yes then first transfer the water in the cooker to the tadka.
11.⁠ ⁠⁠Give this a good boil and then transfer the cooked Lauki and dal.
12.⁠ ⁠⁠Mix will again and cover and cook for another 2-3 mins on medium flame until the sabji has a thick consistency.
13.⁠ ⁠⁠Once done switch off the flame and garnish with fresh coriander.

✨✨ Recipe 2: Soya Chunks Fry with Raita ✨✨

Ingredients –
 1.⁠ ⁠Soya Chunks – 1 cup
 2.⁠ ⁠Water – 3–4 cups
 3.⁠ ⁠Salt – to taste
 4.⁠ ⁠Onion – 1 medium (finely chopped)
 5.⁠ ⁠Capsicum – 1 medium (finely chopped)
 6.⁠ ⁠Red Chilli Powder – 1 tsp
 7.⁠ ⁠Turmeric Powder – 1 tsp
 8.⁠ ⁠Roasted Cumin Powder – 1 tsp
 9.⁠ ⁠Coriander Powder – 1 tbsp
10.⁠ ⁠Fresh Coriander – for garnish
11.⁠ ⁠Desi Ghee – 2 tbsp

For raita-
 1.⁠ ⁠Yogurt 1 cup
 2.⁠ ⁠⁠Kasundi/mustard paste 1/2 tbsp
 3.⁠ ⁠⁠Honey 1/2 tbsp
 4.⁠ ⁠Salt to taste

Method-
 1.⁠ ⁠Start with boiling the water in a saucepan.
 2.⁠ ⁠⁠Once the water comes to a boil add the soya chunks with salt. Mix well and switch off the flame.
 3.⁠ ⁠⁠Let the soya chunks rest in hot water for 10-15 mins.
 4.⁠ ⁠⁠In the meanwhile prepare the masala by heating 2 tbsp of desi ghee in a Kadhai.
 5.⁠ ⁠⁠Then add finely chopped onions. Sauté for 2-3 mins until pinkish brown and then add the chopped capsicum.
 6.⁠ ⁠⁠Mix well and then add the dry spices like turmeric, red chilli powder, roasted cumin powder and coriander spices
 7.⁠ ⁠⁠Mix well again and sprinkle some water over the dry spices as it helps spices from burning. Now let the masala cook on medium flame for 2-3 mins.
 8.⁠ ⁠⁠Now check the soya. Hunks that were soaked in water. If the water is well absorbed and the chunks are soft, drain all the excess water from the chunks.
 9.⁠ ⁠⁠Add these chunks to the prepared masala. Cook for another 5-6 minutes on medium low flame.
10.⁠ ⁠⁠Once done switch of the flame and garnish with coriander.
11.⁠ ⁠⁠To prepare the raita take 1 cup of yogurt in a bowl and add kasundi/ mustard paste with honey and salt. Mix well and serve.
12.⁠ ⁠⁠This combination tastes good with rice and salad.
