This isn’t just a tray of roasted veggies—it’s Briam, a classic Greek dish that turns simple ingredients into something rich, herby, and seriously satisfying.

I first had Briam after hiking through Meteora in the blazing sun, completely wiped out. I sat down at a tiny taverna and they brought me this: roasted potatoes, zucchini, tomatoes, garlic, herbs, olive oil… and a piece of bread to soak up the bottom of the pan. That bite stuck with me. Ever since, it’s been one of my go-to Greek comfort foods.

In this video, I’m showing you how to make it at home. We’re using good olive oil, fresh dill and parsley, and giving it a solid roast in the oven until everything’s caramelized and saucy. Finish with a drizzle of olive oil and a bit of feta, and you’ve got something that’s way more exciting than it has any right to be.
