What makes it different?
Blending a portion of boiled chole + potato with curd to create a luscious, velvety gravy that hugs every chickpea. Trust me, it’s the sabse comforting chole ever – perfect with soft kulchas or steamed rice!

🌶️ Ingredients:
• Chickpeas (chole) – 300 gm (soaked 8-10 hours)
• Potato – 1 (halved)
• Onion – 2 medium, finely chopped
• Curd – 1 cup
• Green chillies – 2, finely chopped
• Ginger – 2 inch, finely chopped
• Red chilli powder – 1 tsp
• Turmeric powder – 1 tsp
• Garam masala – 1 tsp
• Coriander powder – 1 tbsp
• Anardana (pomegranate seeds) – 1 tsp, crushed
• Chole masala – 2 tbsp
• Salt – to taste
• Desi ghee – 3–4 tbsp

🍲 Method:
1. Pressure cook chickpeas, potato, and salt for 8–9 whistles until very soft.
2. Blend 1 ladle of boiled chole with potato and curd into a smooth paste.
3. In a kadhai, heat desi ghee and sauté ginger + green chillies.
4. Add onions and cook till golden (5–6 mins).
5. Add the blended paste, all dry masalas, chole masala, and salt.
6. Cook till oil releases (8–9 mins), stirring in between.
7. Add the remaining boiled chole + water, mix well. Adjust consistency.
8. Cover and simmer for 6–7 mins for flavours to soak in.
9. Serve hot with kulchas or rice!
