I recommend starting with your favorite boxed cookie mix - especially with the dark double chocolate flavor, it helps to get one that you already know you love, as everyone has their own feelings about different brands of cookie mix. This most important part is what you add to it!

Step One: Prepare the boxed cookie mix as directed and stir in 1/2 a teaspoon of peppermint extract and half a bag of chocolate Jell-O pudding & pie filling mix. Add milk a teaspoon at a time until you get the correct consistency for your cookies. This should be think and clumpy, very hard to stir!

Form large balls on your baking sheet and press down to ensure each cookie has enough room and won't melt into its neighbor.

I make my buttercream frosting using unsalted butter and confectioners sugar, but this time I added a dash of the peppermint extract and Supernatural red food dye (just a couple drops!) to the icing. Cook the cookies as directed on the box while you mix your icing, then when you're done baking, I like to put my cookies in the freezer for a bit. The peppermint flavor is really amplified when they're served cold!
