Ingredients:
1 large cup of sweet corn
1 Cucumber, finely chopped
1 Tomatoes, finely chopped
1 onion, finely chopped
1/4 cup fresh cilantro, chopped
1 Green Chilies, chopped
1/4 cup Mint leaves, chopped
1 cup cherry tomatoes, halved
Dressing:
2 tsp olive oil
2 tablespoons fresh lime juice
Salt and pepper ¼ tsp or to taste
Instructions:
Prepare the Corn:
If using fresh corn, shuck the ears and remove the silk. Boil the corn in salted water for 3-5 minutes until tender, then cool and cut the kernels off the cob.
If using frozen corn, thaw and drain well.
Mix the Salad:
In a large bowl, combine the corn, Cucumber, chopped red onion, halved cherry tomatoes, chopped cilantro, Green Chilies, cup Mint leaves, salt, black pepper, olive oil, and mix all the ingredients.
Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
