This amazing eggplant dish is quite easy to cook and needs just 20-25 minutes of your time. Incredibly tasty, Japanese crispy eggplants in a spicy, sour-sweet sauce will be a true delicacy that hard to tear you off!

✅ Ingredients:
• eggplant – 1 lb | 450 g
• frying vegetable oil – 7 fl oz | 200 ml
• corn starch – 3 oz | 100 g
• sour-sweet chili sauce – 2 oz | 50 ml
• rice vinegar – 2 tsp
• garlic powder – 1 tsp
• salt – 1 tsp

✔︎ You will need:
• 2 bowls
• carving board
• pan

📙 Preparation:
1. Peel the eggplants and cut into small dices, lay into a deep bowl, add the salt, garlic powder and rice vinegar, toss neatly and leave for 15 minutes.
2. Heat the vegetable oil in the pan.
3. Dust the part of prepared eggplant pieces in the corn starch, place into a sieve and shake off the over starch.
4. Lay the eggplants carefully into the pan and fry over high heat for a minute, take out on a paper towel to soak extra oil.
5. Then place the fried eggplants into a deep bowl.
6. Repeat two upper steps and fry so all the eggplants.
7. Add the sour-sweet sauce to the fried eggplants and toss neatly.
8. Serve the crispy eggplants in the sour-sweet sauce hot.

❗️Advices:
1. It is better for this recipe to take striped eggplants of medium size as they have less seeds.
2. Choose hard eggplants with glossy peel, it means they are fresh.
