This update shows the fermented ginger carrots after they have been fermenting for a few days. This video is especially helpful for beginners to watch. We grated the carrots and ginger, put them into a quart size jar, added some sea salt, covered the carrots and ginger with filtered water, and weighted them down. Next, we put the lid on the jar and left the carrot ginger mixture in a warm place to ferment. We're now back after a few days to check and see if we like the taste, and if so, the fermented ginger carrots are done and are ready to refrigerate!
