Viral Feta Pasta
Cooking time: 40 minutes
Serves: 4

INGREDIENTS:
2 pints cherry tomatoes
1/2 cup extra virgin olive oil
Salt and pepper
8-ounce block feta cheese
8 ounces dried cavatappi pasta or pasta of choice
6+ garlic cloves
1/2 cup packed chopped fresh basil plus more for serving


INSTRUCTIONS:
1. Preheat oven to 400°F. Place the cherry tomatoes in an oven-safe baking dish. Pour the olive oil on top, and season with salt and pepper. Let's get nasty. Tuck your hand into the olive-y, tomato-y goodness and mix it all up.

2. Place the feta block in the middle of the baking dish surrounded by the cherry tomatoes, and swirl it in the olive oil, coating it all over. Pour a little more olive oil and pepper on the feta, if you’d fancy that dance.

3. Bake in the preheated oven for 35 minutes, until the cherry tomatoes burst, and the feta cheese melts. If you want, broil it for the last 2 minutes for a little char on top.

4. While the tomatoes and feta are baking, cook the pasta in a pot of salted water according to package instructions until al dente. Meanwhile, mince or mash the garlic and chop the basil, reserving some for garnish.

5. When the pasta is ready, drain it, reserving ½ cup of the cooking water incase you need to thin your delicious sauce after the final mix. I didn't end up needing to do this, but you might like it a bit different then me.

6. As soon as the tomatoes and feta come out of the oven, add the garlic and basil leaves and get to mixin'. Transfer the cooked pasta to the baking dish and toss to combine. Leave no noddle unattended! Garnish with more fresh basil and serve warm.
