Lean & Green with Me! Thanksgiving Sides: Green Bean Casserole - Optavia weight loss recipe

Green Bean Casserole

Servings 4 (8 oz per serving)
1/4 Lean, 3 Greens, 1/2 Healthy Fat, 3 Condiments

**I plan to have 1/3 of a serving (2.75 oz) = 1/12 Lean, 1 Green, 1/6 Healthy Fat, 1 Condiment

16 oz. whole green beans - frozen or fresh - just steam them first!
2 C. (5 oz) fresh mushrooms, chopped
1/4 C. onion, minced
1 t. garlic, minced
3 sprays avocado oil spray
5.3 oz. non-fat plain Greek yogurt
1/4 C. light sour cream
1 t. corn starch
1/2 packet (or tiny squirt) Stevia
1/2 t. salt
1/2 t. pepper
1/2 C (2 oz.) reduced fat sharp cheddar
2 T. reduced fat parmesan cheese, grated

Saute the mushrooms, onions, and garlic for 5-7 minutes until the vegetables are tender and the onion is translucent. Add to green beans and allow to cool for 10-15 minutes.

Preheat oven to 350.

Combine the yogurt, sour cream, corn starch, stevia, salt, and pepper. Mix until well combined and then add to the green bean mixture. Thoroughly combine. Then add in the cheddar cheese.

Place this into a casserole dish. Top with 2 T. grated parmesan cheese. Bake for 30-35 minutes.
