I came up with this recipe when I was very young and won a contest in the local paper and also a blue ribbon at my work in a contest for the best pot luck dish. I had a secret ingredient that nobody could figure out. So I never let them know what it was. This recipe is gluten-free and dairy-free. As I'm always telling you, make it for your family's taste. BUT try my recipe first before you start tweaking it. This is for 5 pounds of potatoes but if you need less, just cut the recipe in half.
Ingredients:
5 Lb smooth-skinned potatoes cut into bite-sized pieces and boiled in salted water until fork-tender, about 15-20 minutes after boil starts
(use 1 -2 tsp Not 1 Tbs of salt for water)
6 Eggs hard-boiled and cut or mashed the way you like
1 C. Miricle Whip
1 C. Thousand Island Dressing
1/2 onion or 1 small onion diced finely OR 1 tsp onion powder (not salt)
1 T. Mustard
1/2 t. Salt (I use kosher)
1 t. Black pepper
2 Stalks of celery finely diced (with leaves if you have)
1 t. Garlic powder
1 t. sugar
1 t. dried or fresh dill (optional)
Directions:
After boiling potatoes and eggs, let cool.
Add to a large bowl.
Mix Miracle whip, thousand island dressing, mustard, salt, pepper, garlic powder, and sugar in a bowl.
Taste. It will be tart, but trust me the flavors will mellow out.
Put in the fridge for about 1 hour before serving or overnight.
Stir before serving but if dry, add about 1/2 C. more of miracle whip and stir together
