Vegan Potato & Veg Gratin - Nomadic Vegan ep#3 English

Ingredients

4 medium potatoes
1/2 leek
1/2 broccoli
200g mushrooms

For the cheese sauce:
1/2 cup soaked cashews
1 cup of water
4 tablespoons nutritional yeast
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon oregano
1 teaspoon salt
1 pinch of pepper

1. Preheat the oven to 180°C
2. Peel, wash and cut the potatoes into thin slices
3. In a bowl, mix the potatoes with a pinch of salt and a dash of oil. Don't put a lot of salt because the cheese already has enough
4. Put all the ingredients of the cheese in a blender and mix until it creates a smooth cream without lumps
5. Cut the leek, broccoli and mushrooms
6. In a baking dish, place the potatoes and broccoli
7. Distribute the leek and mushrooms in the gaps between the potatoes and broccoli
8. Pour the cheese sauce over the potatoes with the vegetables and mushrooms, making sure it is well distributed
9. Bake at 180°C for 40 minutes or until the potatoes are ready
10. Serve and enjoy
