Full detailed Recipe of Jammu Style Rajma 👇🏻
Method:
For Cooking Rajma:-
1. In a pressure cooker, add kidney beans(राजमा), black cardamom (बड़ी इलाइची), dry fenugreek seeds( मेथी), water as required, bay leaf( तेज पत्ता), water as required and salt to taste.
2. Cover it with the lid and cook it for 3-4 whistles.
For Ginger Garlic paste:-
1. In a mortar pestle(ओखली), add garlic cloves(लहसुन), green chilies (हरी मिर्च), ginger (अदरक )and make a coarse paste.
2. Keep it aside for further use.
For Tempering:-
1. In a handi or kadai, add mustard oil (सरसों का तेल), once it's hot, add bay leaf (तेज़ पत्ता), cumin seeds (जीरा), onions and saute it for a minute.
2. Add prepared ginger garlic paste and cook it for a minute.
3. Add little water, a pinch of asafoetida (हींग), degi red chili powder, turmeric powder, coriander powder and saute it well.
4. Add tomato puree, curd, salt to taste and cook it well.
5. Add remaining rajma water, boiled kidney beans, and mashed Rajma and salt to taste and cook for a while.
6. Finish it with ghee and transfer it to a serving bowl.
7.Garnish it with coriander leaves and serve hot with rice.
