Southwestern Chicken, Black Bean, and Rice Casserole (Freezer Friendly)
Ingredients
2 cups cooked rice, any kind (I use Jasmine)
15 oz can Black Beans, chili beans, or white beans, drained and rinsed
1 can Whole Kernel Corn, drained
2 cups Cooked Chicken or Turkey, Shredded (or any cooked meat or meat substitute)
1 cup Salsa, choose your favorite
1 Tbsp Chili Powder
1 tsp Cumin
1 tsp Onion Powder
1 tsp Paprika
½ tsp Garlic Powder
½ tsp Black Pepper
½ tsp Salt, or more to taste
½ to 1 cup Cheddar Cheese, Shredded (or any cheese)
Optional Toppings: Avocado, Greek Yogurt or Sour Cream, Salsa, Grape Tomatoes, Hot Sauce, Chips, etc.
Instructions
1. In an 8x11 or 9x13 casserole dish, combine cooked rice, beans, corn, cooked chicken, salsa, chili powder, cumin, onion powder, paprika, and garlic powder. Stir until completely combined. Top with cheese.
2. Bake at 350° until cooked through and cheese is golden and melty, about 25-30 minutes.
3. Serve in a bowl and top with optional toppings! Enjoy!
*If freezing, follow step 1, then cover with wax paper and then foil, and freeze for up to 3 months.
From frozen in a foil pan, bake at 350° for about 60 minutes or until cooked through. If frozen in a glass pan, let thaw overnight in the refrigerator or place the frozen dish into a cold oven and then heat for 350° F to avoid thermal shock.

Ingredients
1 cup Nonfat Greek yogurt
¼ cup Oats (Old Fashioned)
½ cup 2% Milk
¼ cup Ground Flax
2 Tbsp Chia Seeds
1 cup Frozen Strawberries
1 cup Frozen Spinach
1 cup Frozen Blueberries
1 Tbsp Honey
Instructions
Blend all ingredients in a blender until smooth. Serve immediately and enjoy!
