Red Wine and Pear Basque Cake Recipe
Ingredients
For the Pears:

4 pears
750 ml red wine
Half an orange 🍊 (juiced)
1 piece of cinnamon
40 g yellow rock sugar
For the Basque Cake:

200 g cream cheese
40 g white sugar
2 eggs (at room temperature)
120 g whipping cream (at room temperature)
5 g bamboo charcoal powder
15 g black sesame paste
Instructions
Prepare the Pears:

In a saucepan, combine the red wine, orange juice, cinnamon, and yellow rock sugar.
Peel and slice the pears, then add them to the saucepan.
Simmer until the pears are tender and the liquid reduces to a syrupy consistency.
Make the Basque Cake:

Preheat your oven to 210°C (410°F).
In a mixing bowl, blend the cream cheese and white sugar until smooth.
Add the eggs one at a time, mixing well after each addition.
Gradually incorporate the whipping cream, bamboo charcoal powder, and black sesame paste until fully combined.
Bake:

Pour the batter into a greased baking dish.
Bake in the preheated oven for about 25 minutes, or until the top is golden and set.
Serve:

Allow the cake to cool slightly before serving.
Plate the Basque cake with the poached pears on top, drizzled with the reduced red wine sauce.
Optionally, garnish with kumquats and a dusting of powdered sugar.
