Microsoft ruined Notepad in Windows 11 (and soon Windows 10)
How to restore Notepads default behaviour.

Microsoft have made some changes to Notepad and it now supports tabs and the ability to retain details from previous documents, certainly for some people this could be useful, but it also adds a layer or two of extra complexity that could result in the wrong documents being saved or even transmitted digitally by mistake!

To resolve this you can go into the Notepad settings and restore a more "normal" experience.
Hopefully for some people this will be useful and make Notepad easier to use.
