MIX VEG KHICHDI KI RECIPE
Mix Veg Khichdi is a comforting and nutritious one-pot meal. Here's a simple recipe to try:

Ingredients
1 cup rice

1/2 cup moong dal (split green gram)

1 onion, finely chopped

1 tomato, chopped

1 carrot, chopped

1 potato, chopped

1/2 cup green peas

1/2 teaspoon turmeric powder

1 teaspoon cumin seeds

1 teaspoon grated ginger

2-3 green chilies, slit

2 tablespoons ghee or oil

Salt to taste

Fresh coriander leaves for garnish

4 cups water

Instructions
Preparation:

Rinse the rice and moong dal under running water until the water runs clear. Soak them together for about 30 minutes.

Cooking:

In a pressure cooker, heat the ghee or oil over medium heat. Add the cumin seeds and let them splutter.

Add the grated ginger and green chilies, and sauté for a minute.

Add the chopped onions and sauté until they turn golden brown.

Add the tomatoes and cook until they soften.

Mixing:

Add the chopped carrot, potato, and green peas, and cook for another 2-3 minutes.

Drain the soaked rice and dal, and add them to the cooker.

Add the turmeric powder and salt, and mix well.

Pressure Cooking:

Add 4 cups of water to the cooker and mix everything together.

Close the lid of the pressure cooker and cook on medium heat for 3-4 whistles.

Let the pressure release naturally.

Serving:

Open the lid and give the khichdi a gentle stir. Garnish with fresh coriander leaves.

Serve hot with a dollop of ghee on top and accompanied by yogurt, pickle, or papad.
