To make Maple-pecan & cinnamon rolls ingredients we need:
Ingredients For Dough

85gm Butter Plus Extra For Greasing
225 Ml Milk
3eggs
675gm
1tbsp Fast-Action Yeast (Instant Yeast)
75gm Caster Sugar
1 Tsp Salt
FOR THE FILLING AND TO FINISH:

225gm Pecans Or (Walnuts)
7-8 Cardamom Pods
1-2 Tsp Ground Cinnamon To Your Taste
3tbsp Sugar
150ml Maple Syrup
375gm Full Fat Cream Cheese , Room Temperature

Melt the butter in a small pan,
Then using fork, beat in the milk, followed by the eggs, Mix all the dry ingredients together , then make a wall in the center.

Pour the wet ingredients into the dry ones, then mix with a wooden spoon to make a rough and fairly sticky dough , leaves for 5 minutes

Dust the work surface with flour, then turn the dough out onto it.
Start kneading , flouring the dough and your hands if you need to, avoid adding too much. If the dough stick a lot scrape away any bits woth a knife, wash and dry your hand and start again, dusting with more flour. After 5-10 minutes when dough feels very smooth and springy , put it in an oiled bowl, cover and leave to rise in a worm place for 1 hour or until double in size.

Make the filling while you wait finally chopp the pecan. Bash the cardamom seed to release their seeds, discard the husks, then grind the seeds with mortar and pestle. Mix the nuts spice ad sugar and 6 tbsp of the maple syrup.

Flour the work surface again, then turn the risen dough out onto it. And then roll out to a racttangle about 25*30 cm.
Spread the cream cheese all over it, going right to the edges . Scatter with the pecan mixture, then roll into a tight sausage,

Cut it into 12-14 slices with large non-serrated knife dusted with flour ( the flour helps stip the sticking).

Grease a tin with butter (23*33cmrectangle or round spring form tin if you have one ) then tuck the slice into it. Keep the seam of each spiral facing onwards.

Cover with Clingfilm, then leave to prove in a warm place for 30 minutes or until risen.
Poke the lightly :
Preheat the oven to 200C

Bake for 10minutes, then turn the oven down to 180C and bake for another 20-25 minutes (Depending on the size of rolls) or until they have risen and golden all over and cooked right through.

Brush the rolls with more maple syrup and enjoy the same day.
