Recipe: Tawa mutton chops
Serves 3-4

Ingredients:
1) 500 gram Mutton chops (Goat Meat or Chevon)
Whole Spices
Whole spices:
2) 1 tspoon cloves
3) 2 tspoon black peppercorns
4) 2 black cardamom
5) 10-12 green cardamom
6) 4 cm cinnamon stick
7) 1/2 mace
8) 1/4 piece of nutmeg
9) 4 green chilli
10) 5-6 dried red chilli
11) 2 tbspoon ginger-garlic paste
12) 1/2 cup paste of fresh mint leaves
13) Juice from 1 lemon
14) 1 cup curd properly whisked
15) Cooking Oil
16) Salt

Here we go:
1) We will make fine paste of red chillies. Boil these chillies in 1 cup of hot water until they become softer.
2) When red chilies become softer, take them off flame and let them cool down before making a fine paste.
3) Dry roast ingredients listed under whole spices until they start releasing a nutty aroma.
4) In 3 minutes whole spices should be roasted. Turn off the flame and make a fine powder using these spices.
5) We will now make a green masala paste using green chillies, ginger-garlic paste and mint paste.
6) Take a deep bowl. Add whisked yogurt, green masala paste,red chilli paste, dry spices powder, lemon juice and salt as per taste. Mix them all well.
7) Add mutton chops to this marinade and refrigerate it for 3 hours.
8) After 3 hours of marination, keep the marinade at room temperature for 10 minutes.Heat a pan on low flame and add chops to the pan.
9) Add 1 cup of water to the pan and cook the chops covered.
10) In 15 minutes, chops should get cooked. Now cook uncovered on medium flame until excess water gets evaporated.
11) Turn off the flame when you see no traces of water in the pan. Remove these chops in a plate.
12) In step 2 of cooking, we are going to sear the chops in a non-stick pan.Heat a pan. Add some oil to the pan and arrange chops on it.
13) Searing is a process in which meat is cooked on high flame until there is a formation of crispy brown texture coating on both sides of meat.
14) Remove chops from the pan when they are seared.
15) Enjoy Tawa mutton chops with Mint chutney.
