PEANUT BUTTER COOKIES

Ingredients:
1/2 cup (115g) unsalted butter
1 cup peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1.2 cups (180g) plain flour
1 tsp baking powder
1/4 tsp salt

Method:
1. Pre-heat oven to 150 degrees Celsius convection or 170 degrees Celsius conventional.
2. In a bowl, mix unsalted butter and peanut butter until combined.
3. Add brown sugar and white sugar. Mix until well combined.
4. Add egg and vanilla extract.
5. Sift plain flour, baking powder and salt into the mixture. Mix thoroughly.
6. Scoop dough (approximately 1 ice cream scoop) and form into a ball.
7. Place on a baking tray, then press fork twice making criss-cross pattern.
8. Bake for 15 minutes 150 degrees Celsius convection or 170 degrees Celsius conventional oven.
9. Leave them on the baking tray for couple of minutes before transferring to a rack.
10. Serve and enjoy!
