Annakoot - Special Mixed Vegetable sabzi, made on the next day of Deepawali, Also know as गड़ की सब्जी

Ingredient:
French Beans (बीन्स ) - 8 to 10
Taro root (अरबी ) - 1
Radish leaves (मूली के पत्ते ) - 10 to 12
Radish (मूली ) - 1
Carrot (गाजर ) - ½
Ridged Gourd (तुरई ) - 1
Pointed Gourd (परवल ) - 2
Broad beans (सेम ) - 4 to 5
Capsicum (शिमला मिर्च ) - 1
Cauliflower (फूल गोभी ) - 1 floret (60 to 70 gms)
Bottle Gourd (लौकी ) - 1 piece (100 gms)
Spinach (पालक ) - 50 gms
Cluster Beans (ग्वार की फली )- 12 to 15 (50 gms)
Bitter Gourd (करेला ) - 1 (50 Gms)
Pumpkin (कद्दू ) - 1 piece (100 gms)
Cabbage (पत्ता गोभी ) - 1 piece (50 gms)
Radish pod (सेंगरी ) - 50 gms
Round gourd (टिंडा ) - 3 (50 gms)
Okras (भिन्डी ) - 4 to 5 (40 to 50 gms)
Potatoes (आलू ) - 3 (300 gms)
Eggplant (बैंगन ) - 2 (100 gms)
Raw Banana (कच्चा केला ) -1 (100 gms)
Tomatoes (टमाटर ) - 5 (500 gms)
Oil (तेल ) - 6 to 7 tsp
Green coriander (हरा धनिया ) - 6 to 7 tbsp (finely chopped )
Green chili (हरी मिर्च ) - 5 to 6 (finely chopped )
Ginger paste (अदरक पेस्ट ) - 3 tsp
Garam Masala (गरम मसाला ) - ½ tsp
Asafoetida (हींग ) - 1 pinch
Cumin (जीरा ) - 2 tsp
Turmeric powder (हल्दी पाउडर ) - 2 tsp
Coriander powder (धनिया पाउडर ) - 4 tsp
Salt (नमक ) - 2 tsp or to taste
Red chili powder (लाल मिर्च पाउडर ) - 1 tsp
Garam Masala (गरम मसाला ) - 1 tsp


Getting Ready:

1. Take veggies such as french beans,taroroots,radish leaves,radish,carrot,ridged gourd,pointed gourd,broad beans,capsicum,cauliflower floret, bottle gourd, bunch of spinach leaves,cluster beans, bitter gourd,pumpkin,cabbage, radish pod, round gourd,okra, potato, eggplant,raw banana, tomatoes.

2. Wash and pat dry all veggies then chop them.
3. Cut eggplant, raw banana and potato. Keep in water in bowl.
Making :


4. Heat a pan for making Annakoot sabzi, add 2 tbsp oil to the pan,heat oil. When rightly hot, add 1 tsp cumin, 1 pinch asafoetida,1 tsp cumin, 1 pinch asafoetida,1 tsp turmeric powder, add half green chili, keep half for later, 1 tsp coriander powder, 1 tsp ginger paste, slightly roast the veggies, Keep flame low.
5. Add chopped veggies to the pan, mix a little so that spices do not burn. Roast for 2 to 3 minutes.
6. Add 1 tsp salt too,1/2 tsp red chili powder, add 1/2 cup water.Cover and cook it on medium flame for 5 to 6 minutes.Then check sabzi.
7. Chop tomatoes. To prepare tomato masala for the veggies,heat a pan, add 3 to 4 tbsp oil.Heat it, add cumin seeds, turmeric powder,ginger paste, green chili.Roast them. Keep flame low.
8. Add chopped tomatoe, red chili powder, add salt too.Roast the masala well till tomatoes are mashed and till oil is separated from the masala.Keep checking veggies at regular interval.
9. Sabzi seems dry add 1/4 cup water and cover again cook for 5 to 6 minutes then check it.
10. Masala are cooked and ready, took 30 minutes for it. i is cooked, masala are roasted,mix the masala to the sabzi.Turn off flame of the masala.Mix the masala in the sabzi.
11. Add garam masala at the end, add green coriander too. Mix all. Add 1/4 cup water, Increase flame.Mix the sabzi and veggies.Cover and cook veggies on low flame for 2 to 3 minutes.

Serving:
12. Take out sabzi in a bowl, turn off flame.Garnish the sabzi with some green coriander. Annakoot sabzi is served with poori.This quantity of sabzi is sufficient for 8 to 10 members of family.
