🥕 Maple-Paprika Roasted Roots Salad with Feta and Tahini Dressing💖✨

📝 Ingredients:
• Greens – 100 g
• Carrots – 500 g, cubed
• Beets – 300 g, cubed
• Feta – 100 g
• Olive oil – 1-2 Tbsp
• Maple syrup – 1 Tbsp
• Smoked paprika – 1 tsp
• Salt – to taste

Dressing:
• Greek yogurt – 150 g (2% fat)
• Tahini – 30 g
• Lemon juice – 2 Tbsp
• 1 small garlic clove, minced

👩‍🌾 Instructions:

1. Toss the carrots and beets with olive oil, maple syrup, smoked paprika and salt. Roast at 200 °C (400 °F) for 20–25 minutes.

2. Whisk together the yogurt, tahini, lemon juice and garlic until smooth.

3. Spread a spoonful of the dressing on a plate, add the greens, roasted carrots and beets, crused feta, then drizzle with more dressing.
