We all have grown up hearing stories of how food was made before machines took over, when sweetness came from the land, not from factories. Date palm jaggery was once a kitchen essential, rich in minerals, deep in flavor, and made with care. But then came refined sugar, a colonial hangover that replaced tradition with convenience, stripping food of its nutrients and its soul.
In Akluj, Prithviji and his father refuse to let that story end. On their farm, where 4,000 date palm trees stand tall, the workers wake before dawn to tap the trees for Neera: the pure, untouched sap that must be collected before the sun rises. The process is slow, deliberate. The Neera is simmered over firewood, thickening into a rich, caramel-hued jaggery, just as it has been for centuries.
This isn’t just about jaggery. It’s about preserving what was ours before we were made to forget. It’s about farmers who carry forward an inheritance of taste, nutrition, and craftsmanship. And it’s about bringing real food back to the table, one story at a time.
