The weather has been extra hot these past few months and it’s the perfect time of the year to make cooling food and drink such as coconut ice cream, cucumber soup, watermelon juice, and delicious summer salad. ^_^ I hope you will give some of these recipes a try ^-^

Coconut ice cream 🍨
Ingredients
4 cups coconut milk
¾ cup sugar
4 tablespoons cornstarch (corn flour)
¼ teaspoon salt
2 teaspoons vanilla essence

Directions
o Add all ingredients (except vanilla essence) into saucepan and whisk until smooth.
o Turn on stove and over low to medium-low heat, heat coconut milk. Add vanilla essence.
o Keep whisking until coconut milk thickens.
o Once coconut milk thickens, turn off heat and continue whisking from time to time so coconut milk will cool down faster.
o Pour into mold and freeze for about 6-7 hours.
o After 6 hours, break the partially frozen coconut ice cream into chunks and blend until smooth.
o Pour ice cream back into the same mold and freeze overnight.
o Next day, let coconut ice cream thaw at room temperature for a few minutes before scooping it out.

Watermelon juice (please adjust amount to your liking) 🍉🍉🍉
Ingredients
Watermelon (peeled and roughly chopped)
Dash of salt
Lemon or lime juice (optional)
Sugar (optional)

Directions
o Put all ingredients in a blender and blend until smooth.
o Strain out the seeds and pulp.
o Serve chilled.

Cold cucumber soup
Ingredients
4 large cucumbers
2 cups plain yogurt
3 tablespoons lemon juice
3 tablespoons olive oil
¼ cup dill, chopped
¼ cup parsley, chopped
2 cloves garlic, minced
1 tsp ground coriander
Salt and pepper to taste

Directions
o Wash, peel, and remove seeds from cucumbers. Chop into small pieces.
o Put everything in a blender and blend until smooth. You might need to scrape the blender from time to time if cucumber pieces get stuck.
o Refrigerate cucumber soup for at least 1 hour before serving.

Colorful Salad 🍅🌽🍊
Ingredients
Any fresh veggies
4 boiled eggs
Black pepper to taste
Vinaigrette:
½ cup olive oil
¼ cup lemon juice
2 teaspoons brown sugar
Sprinkle of salt

Directions
o Chop veggies and boiled eggs into small pieces.
o In a small bowl whisk olive oil, lemon juice, brown sugar, and salt to make vinaigrette.
o Pour vinaigrette on salad before serving.
