The Head Chef at KOL, he's on a mission to show how Mexican cuisine can be adapted around the world by only using British ingredients for his tasting menu. He's obsessed with masa, salsas, and chiles, but has gained an appreciation and understanding for British ingredients and how they can be incorporated into Mexican cuisine.

His Michelin star restaurant, KOL, is also ranked #17 in the world so we're obviously going to be trying his incredible tasting menu today, but we're also going to his new, more casual restaurant Fonda, and even getting a hands on demonstration of masa from the man himself.
