Cherry Tomato & Basil Rigatoni 🍝🇮🇹
Rigatoni Pasta 1 Cup
Garlic 4 cloves
Dried Red Chilly 1 no
Cherry Tomato 200g
Tomato Puree 60g
Fresh Cream 90g
Olive Oil 2-3 Tbsps
Salt & Pepper to Taste
Brown Sugar 1/2 tsp
Veggie Stock Cube 1 no
Italian Herbs 1 Tsp
Chilli Flakes 1 Tsp
Parmesan Cheese - garnish
Basil leaves - 8-10 leaves

Process :
Boil the pasta for 10-12 mins/ al dente - reserve the pasta boiling water for later
Meanwhile, for the sauce, heat some olive oil & sauté finely chopped garlic along with a dried red chilly - next add in the cherry tomatoes cut in halves & sauté on medium heat for 3-4 mins
Season the tomatoes with salt & pepper to taste along with brown sugar, veggie stock cube & dried Italian herbs - give it a good mix
Lastly, add in the tomato puree, fresh cream & adjust the consistency of the sauce with some reserved pasta water
Bring the sauce to a simmer & add in the boiled pasta along with some freshly cracked black pepper, grated cheese & fresh basil leaves
Toss everything well & serve hot - garnish with some more cheese & basil leaves & enjoy 🇮🇹🍝
