✅Creamy Garlic Spaghetti Recipe

Ingredients
4 heads of garlic
2 sprigs of rosemary
4–5 sprigs of thyme
4 tbsp extra-virgin olive oil
Salt and freshly ground black pepper
250 ml heavy (dairy) cream
40 g grated Parmesan cheese
300 g spaghetti

Instructions

1. Roast the Garlic
Preheat your oven (or air fryer) to 180°C (350°F).
Cut off the tops of each garlic head to expose the cloves.
Place two garlic heads in each of two separate foil packets.
Season each head with a pinch of salt, black pepper, a rosemary sprig, and thyme.
Drizzle about 2 tbsp of olive oil over each packet, then seal the foil tightly.
Roast the garlic packets in the oven or air fryer for 30 minutes.

2. Cook the Pasta
Boil a pot of water and season it generously with salt.
Cook spaghetti according to package instructions until al dente (Al dente is an Italian term that translates to "to the tooth," typically used to describe the ideal texture of cooked pasta), then drain (reserve some pasta water).

3. Make the Sauce
Remove the roasted garlic from the oven and let cool slightly for a few minutes.
Heat a pan over medium heat and add the roasted garlic (discard rosemary and thyme).
Using a fork, mash the roasted garlic cloves into a paste in the pan.
Add 250 ml of heavy cream and 40 g of Parmesan cheese to the garlic paste.
Season with a pinch of salt and ¼ tsp of black pepper.
Bring the mixture to a simmer and cook for 2–3 minutes, stirring occasionally.

4. Combine Pasta and Sauce
Add the cooked pasta to the sauce, tossing to combine.
If needed, add reserved pasta water (1–2 tbsp at a time) to reach your desired sauce consistency.
Simmer for 3–4 minutes, allowing the pasta to absorb the creamy garlic flavor.

5. Serve
Taste the pasta and adjust seasoning if needed. Serve hot and enjoy your creamy garlic spaghetti!
