Simple Tiramisu Recipe: A Taste of Italy at Home

Ingredients:

6 large eggs
140g granulated sugar
300g Savoiardi (Ladyfingers), about 34 cookies
300ml (1¼ cups) espresso coffee
2 tablespoons cognac (or rum, liqueur, brandy, or Marsala wine)
30g unsweetened cocoa powder, for decoration
500g mascarpone cheese

Instructions:

First, make the espresso coffee and let it cool, then add the cognac. Set aside.

Separate the egg whites from the yolks (make sure there is no trace of yolk, as this can prevent the whites from whipping properly).

Whisk the egg yolks with 70g of granulated sugar and place the mixture over a bain-marie. Whisk until the mixture becomes pale in color. (Note: The traditional recipe uses fresh raw eggs, so this bain-marie step is optional if you prefer to skip it.)

Whip the egg whites with the remaining 70g of granulated sugar until stiff peaks form. Once ready, set aside.

Add the mascarpone cheese to the yolk mixture and stir until combined. Then gently fold in the beaten egg whites. Mix slowly until the mixture is smooth.

Quickly dip the Savoiardi ladyfingers into the coffee. Be careful not to let them soak too much, or the tiramisu will become runny.

Layer the dipped ladyfingers in your pan. You can create two or more layers, depending on the size of the pan. Cover the ladyfingers with the mascarpone cream mixture.

Finally, sprinkle the top with unsweetened cocoa powder and refrigerate the tiramisu overnight.
