MALASSADAS

10 lbs flour
10 eggs
½ cup sugar
½ cup butter melted
4 cups warm milk
2 tbsp yeast
1 tbsp salt
6 cups warm water
½ cup sugar for coating each Malassadas
3 gallons canola or vegetable oil for frying

In a small bowl, add 1 cup water, 1 tbsp sugar, 1 tbsp flour and yeast , mix well and put a side. Heat milk and melt butter. In a large bowl, add flour and salt. Beat eggs with sugar and add to the flour. Add yeast and other ingredients except the oil. Mix everything until flour is well combined. Let rest for 15 minutes then do flips by stretching the dough. Let rest again or until the bowl if full to the top. In a large pot, add oil and when the oil reaches 325 degrees it is ready for frying the dough. In a small bowl, add some of the cold frying oil and get your hands coated. Grab a piece of dough and using a tapping motion stretch the dough and drop slowly in oil facing away from you. Cook both sides until golden. Take out the dough and place on a tray with a paper towel to drain excess oil. In a large bowl, add extra sugar and sugar dough on both sides. Serve with a cup of coffee or tea. Enjoy it !
