To Make Paneer Marinade
Paneer - 400 Gms
Curd - 1 Cup
Fresh Cream - 1/4 Cup
Corn Flour - 2 Tsp
Salt - 1 Tsp
Pepper - 1 Tsp
Kasuri Methi - 2 Tsp

To Make Masala Paste
Oil - 1 Tbsp
Whole Spices
( Cinnamon, 2 Cloves, 2 Cardamom )
Onion - 2 Nos
Green Chilli - 4 Nos
Garlic - 10 Cloves
Ginger
Cashew Nuts - 1/2 Cup
Salt - 1/2 Tsp

To Make Paneer Kalimirch
Oil - 3 Tsp
Ghee - 1 Tbsp
Salt - 1 Tsp
Cardamom Powder - 1/4 Tsp
Pepper - 1/2 Tsp
Ground Paste
Fried Paneer
Coriander Leaves

Method:

1. Take curd, fresh cream, corn flour, salt, crushed pepper, kasuri methi in a bowl and mix well.
2. Add evenly cut paneer pieces to this marinade, mix well and marinate for about 20 minutes.
3. Take a wide pan and add oil to it.
4. Add whole spices, chopped onions, green chillies, garlic cloves, ginger and cashewnuts soaked in water for 1 hour.
5. Mix them all well, saute until the onions turn brown and then turn off the stove.
6. Cool these ingredients completely, transfer them to a mixer jar along with some water, grind into a fine puree. Keep the puree aside.
7. Now pour some oil in a pan, keep the flame on a medium, put the paneer pieces in the pan gently and roast them each side for 5 mins. Keep them aside.
8. Take oil and ghee in a pan. Transfer the ground puree and add water.
9. Keep the flame on a medium and add excess marinade if any.
10. Mix and add water. Cook the gravy for about 3-4 minutes.
11. Check for seasoning and add salt if needed. Add cardamom powder and pepper powder.
12. Cover the pan with a lid and let the curry simmer for 5 minutes.
13. Add paneer pieces, mix well, cover the pan with a lid and simmer the curry for another 5 minutes.
14. Garnish the curry with crushed pepper and finely chopped coriander leaves.
15. Peppery Paneer Kalimirch is ready to be served hot and nice with roti or any flatbread of your choice.

Paneer Kalimirch is a delicious malai based gravy curry with a predominant pepper flavor as hte name itself suggests. This is mild as well as peppery fiery.
