唔知道有冇人試過傳統炆乾鮑魚嘅做法,成煲嘢又要開火熄火,又要驚唔夠湯keep住check,又要試腍,覺得唔諗又要炆過,再焗,再試腍,唔諗又焗下再試...... 最後點知衰咗收咗皮,年煤氣費電費都曬埋。

今次我會用一個應該係史無前例嘅方式,用慢煮棒去模擬一個以上所描述嘅煮食環境,唔駛睇火,唔駛焗水嘅做法,一個比傳統方法更快嘅慢煮做法。示範做一個連70歲阿伯都咬得入嘅溏心鮑魚。

Have you ever tried to cook rehydrated abalones with the traditional method before? Enjoyed keep looking after the entire pot all the time? Enjoyed the fear of insufficient stock? Enjoyed paying a fortune for the gas and electricity? And the abalones weren't tender as expected which let you down for a couple of weeks.

This time I've asked the help from my sous vide precision cooker to simulate a similar cooking environment like the traditional method. This method should be very new to all of you as I actually figured it out according to my previous tests.

These sous vide rehydrated abalones are all "Sugar Hearted" as it supposed to be and even an old man at aged 70 found totally no difficulties in the mouth.
