we’re SO back… with another animal crossing video! (also pietro pls get off my island) 🍰🏝️🐾

it was so much fun recreating marshal, zucker, and meringue as the foods that inspired their characters! i hope you enjoy watching it as much as i enjoyed filming : )

01:36 - marshal ☕️

1 egg white
1/4 cup sugar
2 tbsp water
1/2 tbsp corn syrup
1 tbsp gelatin (or 1 gelatin sheet) + 1/4 cup cold water

1. Bloom the gelatin in cold water & set aside for 10 mins.
2. In the meantime, whip the egg whites till frothy. Gradually add the sugar, continually whisking until it reaches stiff peaks.
3. In a small saucepan, add the remaining sugar, water, & corn syrup. Bring to a boil over medium heat, until the sugar dissolves. While whisking, stir this into the egg white mixture until fully incorporated.
4. Dissolve the gelatin by microwaving for 3-5 seconds, until it’s a liquid. Pour into the merengue until fully incorporated & thickens slightly.
5. Separate & color the marshmallow mixture with gel food coloring into a cream color, light brown, navy blue, pastel pink, and light purple. Place them into separate piping bags.
6. Spread corn starch evenly on a baking sheet & pipe the marshmallows, using a toothpick to smooth any mistakes. I suggest starting with the head, ears and face then the body, arms, legs, and finally the tail.
7. Let the marshmallows sit for couple of hours to fully set.
8. With a toothpick & melted chocolate, draw on his face. Let this harden for 10 mins before covering the entire marshmallows with more cornstarch. Finally, dust them off!

05:14 - zucker 🐙

1 cup flour
2 tsp baking powder
1/2 tsp salt
2 eggs
1 tsp soy sauce
1 1/2 cups dashi stock
4 oz boiled octopus
2 scallions, sliced
1 tbsp oil
optional fillings: tenkasu, pickled ginger, cheese
toppings: takoyaki sauce, kewpie mayo, furikake, bonito flakes

1. Into a mixing bowl, whisk together all of the dry ingredients before incorporating the wet, mixing just until the batter is smooth.
2. Heat the takoyaki pan over medium heat. Grease the pan generously with oil.
3. When the oil starts to smoke, fill the pan with batter - slightly overfilling. Add pieces of octopus to each space & sprinkle on the scallion & toppings.
4. After about 3 mins, use skewers or chopsticks to break the connected batter. Rotate each 90 degrees, stuffing the excess dough under as you turn. Repeat this process 2-3 times until each ball is golden brown & crispy.
5. Transfer them to a plate & top with the sauce, kewpie mayo, furikake & bonito.
6. To make zucker’s face, use a bit of kewpie mayo to attach a sucker for his mouth & seaweed bits for his eyes and freckles. Place a bit more takoyaki sauce on top & finish with a toothpick!

08:44 - meringue 🍰

5 eggs (split into whites and yolks)
1/2 cup sugar (split into two portions)
1/4 cup milk
1/4 cup oil
vanilla
1/2 cup + 2 tbsp flour
2 tbsp corn starch
1 tsp baking powder

1 cup heavy cream
3 tbsp powdered sugar
vanilla
strawberry jam
1 strawberry
melted chocolate

1. In a large mixing bowl, beat together the egg whites until foamy. Gradually add the sugar while beating, then add the food coloring, continuing to mix until it reaches stiff peaks.
2. In a separate bowl, whisk together the egg yolks & remaining sugar until it lightens in color. Add in the milk, oil, & vanilla, mix again. Sift the flour, corn starch, & baking powder into the bowl, combine.
3. Add the merengue to the yolk mixture 1/3 at a time, gently folding until there are no streaks.
4. Divide the batter into 2 lined, ungreased pans. Bake at 350 for 25-28 mins or until the top is lightly browned. Immediately remove them & cool upside down, in their pans, on a wired rack for 30 minutes.
5. Make the whipped cream by mixing together the cream, powdered sugar, and vanilla until it's just thick enough to hold its shape.
6. Pipe out her eyes, nose & ears in melted chocolate. Let this fully set!
7. Time to assemble the cake! Cut large triangles of cake out of 2 layers. Pipe a layer of whipped cream on the bottom layer, followed by a thin layer of jam, & another of cream. Top with the next cake.
8. Time to decorate the cake! Pipe & smooth cream on top of the cake to resemble her hair. Pipe two dollops toward the wider part of the cake as her ears. For her horns: pipe another small blob near the “tip” of the cake & a small ring of green dollops near the edge & place the strawberry in the middle.
9. Place the chocolate features on the side of her head. Make any adjustments & that’s it : )
