Tawa Pulao is a Street food recipe that packs in all the flavors of Mumbai’s Street Food.
Almost all the vendors selling Pav Bhaji in Mumbai also sell Tawa Pulao.
Tawa Pulao is a highly flavorful dish that packs in a lot of punch. The major ingredients of a tawa pulao include of course, the maska- the butter, pav bhaji masala, chili garlic paste, vegetables and the rice. Along with the recipe for the tawa pulao, I am also going to share the recipe of a garlic chutney that is often served with the pulao. I have added my own twist to the chutney to make it all the more delicious!
You can easily make this tawa pulao at home in a large pan if you do not have a big enough tawa.

Recipe :

Tawa Pulao
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 3-4

Ingredients:
2 cup sela basmati rice (parboiled rice)
½ tsp turmeric powder
1 bay leaf
2 black cardamoms
2 tbsp butter
2 tbsp oil
2 onions, finely sliced
1 capsicum finely sliced
½ small cabbage, finely sliced
3 large tomatoes, finely sliced
2 medium boiled potatoes, cubed
½ cup green peas
3 tbsp pav bhaji masala
4 tbsp chili garlic paste
For the Chili Garlic Paste:
20 whole red chilies
50g garlic
For the chutney:
½ cup chili garlic paste
1 tsp chopped garlic
2 tbsp oil
Salt to taste
Garlic water to sprinkle
1 mashed potato
Chopped coriander
Lemon juice

Method:
Wash and soak the rice for 30 minutes. Bring 6 cups water to a boil. Add the salt, turmeric powder, bay leaf, black cardamom, and the soaked rice. Cook rice till almost 80% done. Drain and set aside.
Make the chili garlic paste. Deseed the red chilies and soak in hot water for 30 minutes. Remove from water and grind to a smooth paste with the garlic.
Heat the butter on the tawa. Add oil to prevent burning of the butter. Add t sliced onions and cook for a minute. Add the capsicum and sauté till the onions begin to soften. Add the sliced tomatoes, cabbage and mix well. Add the chili garlic paste and cook for a few minutes. Add the pav bhaji masala, salt to taste and mix. Add the boiled rice and toss well. Add the cubed potatoes, boiled peas and mix well. Sprinkle garlic water over the rice and chopped coriander and mix. finally finish with the lemon juice and serve.
For the chutney.
Heat 4 tbsp oil in a pan. Add the remaining chili garlic paste. Wash the blender with ½ cup water and add it to the pan. mix well. Add ¼ cup boiled mashed potatoes.
Mix well and cook for 4-5 minutes.
Serve with tawa pulao.
