▼MUFFIN TIN PEPPERMINT PATTY COOKIES RECIPE▼

Ingredients:
•1 ½ sticks unsalted butter
•¾ cup sugar
•1 egg
•1 teaspoon vanilla extract
•¼ teaspoon peppermint extract
•2 ½ cups all purpose flour
•¼ teaspoon salt
•¼ teaspoon baking powder
•12 peppermint patties
•¼ cup sprinkles

Directions:
•Freeze the peppermint patties to the point that they are solid.
•Using a stand mixer with the paddle attachment, mix on high the unsalted butter and sugar for about 5 minutes, or fluffy.
•Add the egg, vanilla extract and peppermint extract and mix on high for about 30 seconds or when the ingredients fully incorporate.
•Add the all purpose flour, salt and baking powder and mix on medium to high until it is one consistency.
•Scoop enough dough into the muffin tin to cover the bottom of each muffin cup.
•Press the dough into the bottom of each muffin cup to form the bottom of the cookie.
•Place a frozen peppermint patty in the center of each muffin cup and push the patty into the dough.
•Using the rest of the dough, cover the peppermint patty in each muffin cup and press the dough down.
•Sprinkle sprinkles over the tops of the cookies.
•Refrigerate for at least an hour.
•Preheat an oven to 350 degrees.
•Bake in a 350 degree oven for 14 to 19 minutes.
•Let cool in the pan for 5 minutes.
•Move the cookies to a cooling rack and let cool for 30 minutes.
