Cardamom almond sweet
delicious Suji Badam er Mishti (Semolina & Almond Sweet) – a simple Bengali-style sweet made with suji (semolina), badam (almonds), and minimal ingredients.

Ingredients:

Suji (semolina) – 1 cup
Sugar – ¾ cup (adjust to taste)
Ghee – 2-3 tbsp
Milk – 2 cups
Almonds (chopped or powdered) – ¼ cup
Cardamom powder – ½ tsp
A few saffron strands (optional)
Raisins or cashews – for garnish

Instructions:

Roast the suji: Heat 1 tbsp ghee in a pan and lightly roast the suji until it turns golden and gives off a nutty aroma. Keep stirring to avoid burning.

Heat the milk: In another pan, warm the milk with sugar, saffron (if using), and cardamom powder. Stir until sugar dissolves.

Add the warm milk mixture slowly into the roasted suji while stirring continuously to avoid lumps.

Add chopped or powdered almonds and cook on low flame until the mixture thickens and leaves the sides of the pan.

Add remaining ghee and mix well.

Transfer to a greased plate or mold. Garnish with raisins, cashews, or extra almonds.

Let it cool slightly, then cut into squares or roll into balls (like suji badam laddu).
