This works for essentially all sprinkler heads. When it's rigid steel pipe or the orange PVC, you do not need to mess with the (non-existent) brackets. Some brackets are low profile and more affixed to the sprinkler head, and simply sit on the grid with toothed spring clamp type arms.
With these brackets however, they're screwed in from the inside, so removing the bracket to set the tile is virtually impossible to reinstall, therefore the heads are supposed to be removed. Depending on the head, you MIGHT be able to get away with simply raising it, but it's just much easier to set it aside.

If you're worried about damaging the head, you can keep the plastic cup on. I'm not worried about it myself, I'm cautious and careful enough and done it plenty for years, so I take the cup off because it's just that much easier to set the head back down into place and to check your height.
