Kabocha Curry
chop one onion and one kabocha squash. grate 1 inch of fresh ginger and crush 3-4 garlic cloves. saute garlic, ginger, and onion for a few minutes then add kabocha. pour in about 6 cups of bone broth and bring to a boil. add 1 TBS curry powder. turn down heat and simmer for 20 mins. add a can of coconut milk and add chopped bok choy, simmer until bok choy is tender. squeeze of fresh lime, top with fresh cilantro and salt!
