🍞 Homemade Ladi Pav Recipe | Soft & Fluffy Bakery-Style Pav at Home
Perfect pav for pav bhaji, vada pav, maska pav & daily breakfast! Ghar par hi bilkul bakery-style soft, light & buttery pav banaaye simple ingredients + perfect technique!
🧂 Ingredients (सामग्री)
190 g Flour (मैदा)
3.5 g Salt (नमक)
8 g Sugar (चीनी)
3 g Instant Dry Yeast (इंस्टेंट ड्राई यीस्ट)
4 g Milk Powder (दूध का पाउडर)
4 g Gluten (ग्लूटेन)
2 g Improver (इम्प्रूवर)
120 g Water (पानी)
15 g Oil (तेल)
👩🍳 Method (विधि)
1) Take a mixing bowl and add flour, salt, gluten, bread improver, yeast, sugar & milk powder.
2) Switch on your stand mixer at the lowest speed for 1 minute.
3) Add water and start kneading the dough.
4) Increase the mixer speed to medium.
5) Knead till the dough passes the windowpane test.
6) Add oil and knead until the oil is fully incorporated.
7) Do NOT over-knead.
8) Let the dough proof for 45 minutes to 1 hour.
9) Punch down the dough gently.
10) Make 60g boules each, place them in a lined tin & keep for final proof.
11) Check using the dimple test.
12) Bake at 180°C for 12–15 minutes.
13) Once cooled, glaze with oil and cover with cling wrap to keep softness.
