Restaurant Style Cholay Recipe | Chana Recipe | ناشتے والے چنوں کی ریسپی | Meraamskitchen

Ingredients:

- 1 cup white chickpeas
- Water
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup oil
- 2 onions
- Proven spices (coriander, cumin, carom seed, cardamom, cinnamon, star anise, black pepper)
- Other spices (salt, red chili powder, coriander powder, cumin powder, turmeric powder, black pepper powder, hot spice powder)
- 1 1/2 tablespoons ginger garlic paste
- 3 green chilies

Instructions:

1. Soak chickpeas in water overnight. Drain and cook in a pressure cooker with 3 jugs of water and 1 teaspoon salt for 40 minutes.
2. Blend cooked chickpeas with 1 cup water to make a paste.
3. Heat oil in a cauldron and sauté onions until golden brown.
4. Add ginger garlic paste, proven spices, and other spices. Mix well.
5. Add water and bring to a boil. Separate oil and add gravy again.
6. Add chickpea paste, mix well, and cook for 4-5 minutes.
7. Add hot spice powder, black pepper powder, and green chilies. Mix well and cover for 10 minutes.
8. Cook on medium flame until oil separates again. Pour and cover for 1-2 minutes.
9. Dish out and serve.
