--Cannoli filling--
Ingredients
2 cups Cream Cheese
3.5 pkgs ricotta cheese (280g each pkg)
3/4 cup Iceing sugar
1.5 tsp vanilla extract (optional)
1 tblsp lemon juice or 1/2 small lemon juiced (optional)
1 lemon zest

Mix together everything except the cream cheese and blend in a blender or food processor until smooth

Best the cream cheese on med high speed and then mix together with ricotta filling.

Fill pipeing bags and place in the fridge until your pastries are cooled and ready to be filled
