3 Finnish Christmas Recipes VEGANIZED

In todays fun Christmas video I am sharing 3 of my absolute favourite vegan christmas recipes. These are traditional Finnish Christmas recipes which I am so happy we can also veganize. Its going to be a wonderful vegan christmas with lots of nice food.

Recipes:

Sweetened Potato Casserole (Perunalaatikko):
2kg Potatoes
0,8 Cups of Flour
50 g of Vegan butter
0,5 - 1 Litre of vegan milk
2 tbs Maple Syrup
3 tsp Salt
Peep, chop and cook potatoes. Mash them up. Add half of the butter and a bit over half of the flour. Mix. Add the rest of the flour on top ( do not mix). leave sit for 5-6 hours or overnight. Mix the mixture and add the milk, syrup and salt. Place in a greased casserole dish. On top place chunks of vegan butter. Place in the over in 200C for 1/2 hour. Reduce temperature to 150C and leave in for another 2 hours.

Carrot Casserole (Porkkanalaatikko):
1kg Carrots
1tsp Salt
0,6 Cups Porridge Rice
0,4 Cups vegan milk
1 Flax egg (1 tbsp ground flax mixed with 2tbsp water) (OPTIONAL)
0,2 Cups od Maple Syrup
1/4 tsp Nutmeg
1/4 tsp Pepper
Peel and chop carrots. Cook them half way. Save the rest of the water and cook the porridge rice in this (around 20min). Meanwhile mash the carrots. Add in the milk, flax egg, syrup and other spices. Once rice is cooked add it into the carrot mixture too. Mix it all up. Place in a buttered casserole dish. On top add some breadcrumbs. Place in the oven for 45min (200C).

Rutabaga casserole ( Lanttulaatikko):
1kg of Rutabaga
0,8 Cups of soy whipped cream
2 flax eggs (OPTIONAL)
1tsp Salt
1 tsp ginger
1/4 tsp pepper
1/4 tsp Nutmeg
0,3 Cups of Maple Syrup
Peel, chop and cook the rutabagas. Mash them up. Add all the other ingredients with the mashed rutabagas. Mix well. Place the mixture into a buttered casserole dish. On top of the casserole add some breadcrumbs and butter notches. Place in the oven for 2 hours (175C).
